Today is Cinco De Mayo! This year I am doing something a little different. Instead of making a cutesy Cinco De Mayo bento lunch, I am posting a roundup of Mexican food bentos I have packed up and sent off to school with my daughter.
1. Bean & cheese tortilla roll ups
Refried beans, shredded cheese, & purple corn tortilla rolled up and cut into sections. Mini sweet peppers, a couple olives, green grapes, strawberries, and orange slices complete this lunch packed in our ECOlunchboxes three-in-one.
2. Taco Kit Lunch
This taco kit lunch is packed in our Bentgo Kids and contains flour tortillas, shredded chicken, Mexican rice, shredded cheese, refried beans, and a peppermint.
3. Burrito Bento
Mini sweet peppers, red grapes, chicken & rice burrito, rice krispies treat, and mango slices all packed up neatly in our Lego lunchbox.
4. Quesadilla Lunch
Chicken, cheese, & green chili quesadilla with a side of grapes & watermelon cubes packed in one of our EasyLunchboxes. To keep the quesadilla crunchy ~ make it fresh in the morning and let cool to room temperature before placing in the lunchbox. Pack with other items that are stable at room temperature and skip the ice pack. The quesadilla will still be crunchy at lunch time.
This Yumbox holds tortilla chips, black olives, sweet pepper rings, and refried beans. My daughter loves beans and uses it as the chip dip. Substitute with whatever dip your child loves ~ ground beef, sour cream, nacho cheese, etc.
