Cinco de Mayo - DIY Tacos

Today is Cinco de Mayo.  This year we are celebrating with a DIY (do it yourself) taco lunch complete with all the fixings.  I sent the taco filling in our Thermos so my daughter can enjoy a warm meal today. This is a simple lunch made fun with the DIY portion (my daughter loves this type of lunch) and a few Cinco de Mayo themed decorations.

In this lunch:  Black beans, rice, and beef mixed together in the Thermos.  In the EasyLunchbox are black olives, mango chunks, shredded cheese, red pepper, and two tortillas.

Happy Cinco de Mayo!
