Belize - Muffin Tin Meal

This week's Muffin Tin Monday theme is jungle.  The first thing that came to mind when thinking about this was the very first vacation that my husband and I took together when we were first dating.  We took a trip to Belize.  While there we visited the Lamanai Mayan Ruins.  To get there we took a bus and then a guided boat tour.



Top Row:  Pineapple chunks (I scored a great deal at the grocery store this week, fresh pineapples $1 each!) to represent the sun, broccoli as the jungle with a monkey in the trees, and a leftover taco.  I cut the tortillas in to a circle placed in the muffin tin then added the filling.

Bottom Row:  A second leftover taco, tortilla chip pyramid, under the chips in the cup is salsa, and a crocodile pick in the black bean "river".

To make the tortilla chips I cut the tortilla with my fun bites cube it cutter then cut a triangle shape.  There is a non cut tortilla chip underneath to support the fun bites chip.  I placed the tortilla pieces in the toaster oven and broiled them for 3 minutes.  They turned out nice and crispy.

  5. Beyond cool! Love the great use (or reuse) of the tacos to make into a pyramid. Crocodile river and OF COURSE the monkey in the tree!! 😉
