Closing Ceremonies

Since I just discovered that Fridays are leftover days, I went to the fridge to see what was in there.  What I found was half a quesadilla. Hmmm....what should I do.  All that I keep seeing when I look at the quesadilla is an Olympic torch base.  OK, why not.  I will do leftovers with a leftover theme from this week.  Here it is....drum roll.

Left Box:  Leftover sausage and cheese quesadilla, bell  pepper flames, and olive Olympic rings.  On top of a bed of leftover mangoes.

Middle Box:  Star cucumber slices and black olives

Right Box:   Coconut cookies with Trader Joe's cookie butter in the middle to make a cookie sandwich. **if you have not had the TJ's cookie butter, you are missing out on some yummy deliciousness**  And no there is not a Trader Joe's where I live either :-(.  The cookie is the Gold medal in case you did not get it.  Cut apples and bell pepper ribbon.
  >I don't normally pack cookies or candy in lunches, but it is Friday and sometimes you need to bend the rules.
